Thanks to the strength of W330 gluten and its high protein content (minimum 13%), this flour allows the preparation of doughs with:

  • 24+ hours maturation at room temperature

  • 36–48+ hours maturation at controlled temperature (refrigerator)

With a hydration capacity of at least 62% , Castelana Rossa is ideal for Neapolitan pizza, artisanal pizza, raised alveolar tops, focaccia and long-fermented bakery.

It is also perfect for making preferments such as maya, biga or poolish, which can then be combined with weaker flours, such as Castelana Verde or Castelana Blu, to obtain complex flavors and balanced textures.

The final products have:
